Maca (Lepidium meyenii) is perhaps the crop grown at higher altitudes than any other crop in the world - for example, it is grown at altitudes up to 4,300 m in the northern Peruvian Puna. The tuberous root of this herbaceous plant is rich in sugars, starches, protein and essential minerals. Dried maca roots are delicacies with a piquant taste and an aroma similar to butterscotch.
