Kaniwa (Chenopodium pallidicaule) or cañihua as it is known in South America is a very resilient crop adapted to cold and drought. It is closely related to Quinoa (Chenopodium quinoa) and it is cultivated at altitudes above 3,800 m in the Andes. Kaniwa’s domestication and farming goes back thousands of years; this grain is outstandingly nutritious, high in protein and fibre, and has a very crunchy texture.
